What could cause my air conditioning to blow cold air when first started but then when driving down the road the air condition begins to blow warm air. However, when you come to a stop light or sign and take off really fast it begins to blow out cold air again then warms up after a few minutes?

You have a vacuum leak somewhere in the system. Possibly at the canister but most common at the back of the selector. These tend to get knocked around when changes to the stereo unit are performed.
