I am wanting to put 2 exhaust systems on this truck i.e. from the headers the pipes 2 catalytic converters 2 mufflers, where the piping never attaches. Is this possible/legal?

I would suggest using an electronic exhaust cut-out kit if money is no object. Cost is over $400 but you can be legal until you decide you do not want to be. This is a stainless steel kit so you do not have to worry about it rusting out.
If you are looking to save some money and do it yourself on the cheap, Use a non-electronic kit. This kit is under $100.
Either kit will provide you the ability to run two exhaust systems or one exhaust and open exhaust. The electric kit would be my choice and just seems wicked cool.
