The dash warning lights on my 2005 Chevy express randomly come on and the the fuel, water temp and oil pressure gauges also drop to zero . Then all returns to normal until it happens again. This does not appear to affect the driveabilty of the vehicle except for the gas mileage, which has taken a hit.

This is quite common and is realted to poor manufacturing of the gauge cluster itself. Replacing or having your gauge cluster is needed for the repair of this issue.
Would this also affect the speedometer, as when the gauges are misbehaving, the speedometer reacts slowly when slowing down and the gear indicators also reacts slowly.
